Tender seared chicken thighs simmered in a rich garlic, white wine, and cream sauce with Swiss brown mushrooms. Finished with freshly grated parmesan and herbs, it pairs well with mashed potatoes, pasta, or rice.
If Swiss brown mushrooms are unavailable, baby portobello or cremini mushrooms are good substitutes, and one brown or yellow onion can replace the shallots.
If fresh herbs are unavailable, use 1 tsp dried parsley and 1/4 tsp dried tarragon.
Chicken stock can be substituted for the dry white wine in equal measure.
